Gluten Free Protein Coffee Cake

Who doesn't love a good coffee cake? Mmmm the ones from Starbucks that are so decadent, sweet, mouth watering, buttery, but oh so bad for you? Well here I've HEALTHIFIED it and made it protein packed! Enjoy with a nice side of coffee and a good book :P
- 1/2 cup oats 
- 1 egg

- 1/4 cup Greek yogurt 
- 1/4 to 1/3 cup black brewed coffee (depending on how strong your coffee is) 
- 2 TBS apple sauce 
-1 tsp baking powder - cinnamon to sprinkle on top - optional peanut butter to swirl on top 

-preheat oven to 350 F
 - blend all ingredients together well except cinnamon topping and peanut butter topping 
- pour into 2 greased or oiled up ramekins 
- sprinkle cinnamon on top and swirl in optional peanut butter 
- bake for 20-25 minutes or until toothpick comes out clean 

Makes 2 servings

- Cals: 194 - Fat: 4.2 g - Carbs : 18.9 g - Fiber: 2.2 g - Protein: 21.5 g
