Easiest Healthy Gluten Free Black Bean Brownies!

Who would've thought that black beans could taste so guilty... but be so healthy?
Here's the base ingredient! But they're so versatile and fun to play around with, so I included 2 other crazy recipes!

Ingredients:
- 1 egg
-3/4 cup black beans rinsed (around 6 oz)
- 2 TBS cocoa powder
- 2 TBS natural peanut or almond butter
- 3 - 4 TBS honey (depends on how sweet you like)
- 2 TBS almond milk
- 1/2 tsp baking soda

Method:
 -preheat oven to 350 F
- blend all ingredients VERY WELL TOGETHER!
- pour batter into greased cupcake tin [6] OR pour into a square brownie pan!!
- bake for 18 minutes if in cupcake tin or 20-25 if in square pan - let cool before removing - serves 6!

Nutritional info for ONE brownie out of 6: - 101 calories - 3.5 g fat - 15.4 g carbs - 2.2 g fiber - 4.4 G protein

BUT why stop there?! Here are a few variations of the brownie!
Have you ever seen the pinterest pictures of the desserts that you KNOW would cause your arteries to clog and heart to burst but you want to eat them anyway?!?!
Well NOW you can healthify them, and not cause your pants to pop! :P

TRIPLE THREAT BROWNIES 

Pinterest's Version
 Ingredients:
- 1 Quest bar
- Brownie Mix from above

- 2 TBS protein powder + 1.5 TBS coconut flour + 5 to 6 TBS water
- pb2 or peanut butter

My version
Method:
-preheat oven to 375 F
- get brownie mix ready and set aside
-microwave questbar for 10 seconds
- break into 18 pieces
- roll each into a ball and flatten between palms into 18 flat cookie shapes
- mix PB2 or melt peanut butter and set aside
- mix protein, flour, and water and set aside


In a lined or greased up cupcake pan, layer the following bottom to top: 

-Little bit of Brownie mix,
-Quest Cookie,
-Peanut butter,
-Quest Cookie,
-Protein coconut mix,
-Quest Cookie,
then pour brownie batter over it so it covers EVERYTHING - all sides as well

- bake for 16-20 minutes or until brownie thoroughly cooked
- Makes 6 triple threat brownies!


BLACK BEAN PB CUP BROWNIES
 Ingredients:
-Brownie Mix
-3 packages of QuestBar Peanut Butter Cups [so 6 pb cups]

 Method:
-preheat oven to 375 F
- prepare all black bean brownie ingredients - blend well!!
- grease cupcake tin, pour a small amount of Brownie batter in the bottom of 6 cupcake holders
- put 1 peanut butter cup in each of the 6 holders
- pour rest of brownie batter over the cups
- bake for 15-20 minutes, until toothpick comes clean
- let cool before removing

Makes 6 servings!!
